Dill Pickle Pasta Salad

Ingredients
  

  • 8 oz Ditalini Pasta
  • 1 cup Dill Pickles, Diced (reserve liquid from jar)
  • 1/4 cup Sweet White Onion, minced
  • 3 TBS Fresh Dill, Chopped (divided)

Dressing:

  • 1 1/3 cup Mayonnaise
  • 2/3 cup Sour Cream
  • 1/4 tsp Cayenne Pepper, Ground
  • 3/4 Cup Dill Pickle Juice
  • Salt and Pepper, To Taste

Instructions
 

  • In a large pot, fill halfway with water and salt with a Tablespoon of salt. Bring to a boil.
  • Pour 8oz of Ditalini Pasta into the boiling water. Cook to al dente. Approximately 9-11 minutes.
  • Drain and run cold water over pasta to cool.
  • Place Pasta, Diced Pickles, Minced Sweet White Onion and 2 Tablespoons of Fresh Dill in a large bowl. Mix together until evenly distributed.
  • To make the dressing: In a medium sized bowl, whisk together Mayonnaise, Sour Cream, Cayenne and Dill Pickle Juice.
  • Pour the dressing over top of the pasta mixture and stir until all the pasta is coated in the dressing.
  • Season with Salt and Pepper to your taste. Garnish with reserved fresh dill.
  • Store in the fridge until ready to use.
  • Bone Apple Teeth!
