
Dill Pickle Pasta Salad
Ingredients
- 8 oz Ditalini Pasta
- 1 cup Dill Pickles, Diced (reserve liquid from jar)
- 1/4 cup Sweet White Onion, minced
- 3 TBS Fresh Dill, Chopped (divided)
Dressing:
- 1 1/3 cup Mayonnaise
- 2/3 cup Sour Cream
- 1/4 tsp Cayenne Pepper, Ground
- 3/4 Cup Dill Pickle Juice
- Salt and Pepper, To Taste
Instructions
- In a large pot, fill halfway with water and salt with a Tablespoon of salt. Bring to a boil.
- Pour 8oz of Ditalini Pasta into the boiling water. Cook to al dente. Approximately 9-11 minutes.
- Drain and run cold water over pasta to cool.
- Place Pasta, Diced Pickles, Minced Sweet White Onion and 2 Tablespoons of Fresh Dill in a large bowl. Mix together until evenly distributed.
- To make the dressing: In a medium sized bowl, whisk together Mayonnaise, Sour Cream, Cayenne and Dill Pickle Juice.
- Pour the dressing over top of the pasta mixture and stir until all the pasta is coated in the dressing.
- Season with Salt and Pepper to your taste. Garnish with reserved fresh dill.
- Store in the fridge until ready to use.
- Bone Apple Teeth!
