Preheat the oven to 350 degrees Fahrenehit. Prepare a 9×5" baking pan with parchment paper and pan spray
Make Banana Bread Batter:
In a large mixing bowl, cream together softened butter and sugar.
Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with eggs and vanilla, mixing until blended.
In a separate bowl, whisk together: flour, baking soda and salt then fold into batter.
Cinnamon Swirl:
Whisk Together Brown Sugar and Cinnamon until evenly distributed.
Crumb Topping:
Whisk together Cinnamon, Flour and Brown Sugar.
Add in melted butter and mix until incoropated. Make sure to not over mix. The mixture will resemble crumbs
Assemble Coffee Cake Banana Bread:
Spread hald of the Banana Bread Batter into the prepared 9x5" Baking Pan.
Sprinkle the cinnamon swirl mixture over top of the mixture in the pan.
Spread the remaining of the banana bread batter into the pan on top of the cinnamon swirl mixture.
Sprinkle the Crumb topping over top of the banana Bread.
Bake in the preheated oven for 45 to 55 minutes. Check to make sure its done by inserting a toothpick or knife, remove and if it comes out clean, your bread is done.
Icing Recipe:
Sift Powdered Sugar to make sure there are no lumps.
Whisk heavy cream (or milk) and vanilla into the powdered sugar. Whisk out any lumps that may form.
If mixture is too thick, add in some extra heavy cream, 1 TBSP at a time.
Finish Banana Bread:
Once the banana bread is finished baking, let it sit for 15 minutes before removing from the pan.
Once cooled, drizzle the icing over top of the banana bread.
