Creamy Sausage Gnocchi Toscana Soup

Ingredients
  

  • 1 LB Italian Sausage
  • 1 ea Yellow Onion, Small
  • 4 cloves Garlic, Minced
  • 1 package Gnocchi
  • 3 Cups Fresh Kale, Chopped
  • 1 Cup Corn
  • 8 oz Jar Sun Dried Tomatoes with herbs, Drained
  • 4 Cups Chicken Stock
  • 1 1/2 Cups Heavy Whipping Crean
  • Salt and Pepper To Taste

Instructions
 

  • In a large pot, Saute the onions and garlic until slightly caramelized, about 5 minutes.
  • Add in the italian sausage, cooku until the sausage is browned, breaking up during the cooking process. Approximately 8-10 minutes.
  • Add the gnocchi, kale, corn and sun dried tomatoes. Stirring to evenly combine, cooking just until the kale wilts slightly.
  • Add in the chicken stock and heavy cream. Bring the soup to a simmer and cook for approximately 2-3 minutes or until the gnocchi float to the surface of the soup.
  • Taste and season the soup with salt and black pepper as needed.
  • Serve warm with any desired toppings!
