
Creamy Sausage Gnocchi Toscana Soup
Ingredients
- 1 LB Italian Sausage
- 1 ea Yellow Onion, Small
- 4 cloves Garlic, Minced
- 1 package Gnocchi
- 3 Cups Fresh Kale, Chopped
- 1 Cup Corn
- 8 oz Jar Sun Dried Tomatoes with herbs, Drained
- 4 Cups Chicken Stock
- 1 1/2 Cups Heavy Whipping Crean
- Salt and Pepper To Taste
Instructions
- In a large pot, Saute the onions and garlic until slightly caramelized, about 5 minutes.
- Add in the italian sausage, cooku until the sausage is browned, breaking up during the cooking process. Approximately 8-10 minutes.
- Add the gnocchi, kale, corn and sun dried tomatoes. Stirring to evenly combine, cooking just until the kale wilts slightly.
- Add in the chicken stock and heavy cream. Bring the soup to a simmer and cook for approximately 2-3 minutes or until the gnocchi float to the surface of the soup.
- Taste and season the soup with salt and black pepper as needed.
- Serve warm with any desired toppings!
