What comes to mind when you hear the flavor Cookies n’ Cream? A true classic, you’ll see it everywhere and anywhere. So what makes these Cookies n’ Cream Brownies so special? Well your taking a classic super fudgy brownie and stuffing the classic Oreos into the middle. Then you’re topping them with a creamy yet fluffy oreo buttercream frosting. So to answer your question, honestly nothing makes them super special but its a classic flavor brought together with a very homey after dinner treat!
Brownie Ingredients:
- 8 Eggs
- 2 Cups Sugar
- 1 Cup Packed Brown Sugar
- 16 oz. Melted Butter
- 2-1/2 Cups Cocoa Powder
- 4 tsp Vanilla Extract
- 1 Cup Flour
- 1 tsp Salt
- 1 Family Size Package Oreos, divided
Oreo Frosting Ingredients:
- 1 Cup Butter, Room Temperature
- 4 Cups Powdered Sugar, Sifted
- 1 tsp Vanilla
- 1/2 tsp salt
- 4 Tbsp Milk
Directions:
- Preheat convection oven to 300 degrees F. Grease 9×13 pan, line with parchment paper if desired.
- In a large mixing bowl, combine eggs, white sugar and brown sugar. Whisk until lights and frothy.
- Add in Melted Butter and Vanilla, mix until combined.
- Add in All the remaining brown ingredients. Fold Thoroughly, making sure not to leave any pockets of dry ingredients.
- Pour half of the brownie batter into the bottom of the greased baking pan and spread evenly.
- Line the pan with Oreos, leaving as little room as possible.
- Pour the remaining brownie batter on top of the oreos, spread evenly over top.
- Place the brownies into the preheated oven and bake for approximately 45 minutes, rotating halfway through.
- While the brownies are baking. Place the softened butter into a stand mixer or a large bowl and use a hand mixer. With the paddle attachment, mix the butter until it lightens in color and air is incorporated, approximately 5 minutes. Scrape down the sides with a rubber spatula.
- Add in the sifted powdered sugar, start off on a low speed and slowly beat the powdered sugar into the butter. Once the two ingredients are combined, add in the remainder of the oreos from the family pack of oreos.
- Slowly increase the speed back to medium speed as the ingredients slowly come together. Beat the ingredients for about 3-4 minutes.
- Lower back down the speed and add in the milk, salt and vanilla. Slowly increase speed and beat on medium speed for 3-4 minutes.
- Once the brownies come out of the oven, allow to fully cool throughout, approximately 2 hours.
- Once cooled, spoon the cookies n cream frosting onto the brownies and spread evenly on top!
- Cut to desired size and enjoy! These babies are thicccc, so one pan will get you a long way!
